Though you can check the OS and customize keyboard shortcuts, most developers only bother with the common keys plus whatever ones they are used to. It sucks but I guess that's the trade-off for easy cross-platform development. The next version of AIR promises to open up a few OS features in limited ways. Hopefully they'll continue to bring in things like native spell-checking and standard keyboard navigation.
